Soup, there it is.

This was the result of our weekend. Ha! šŸ˜‰ Someone was super into his watermelon but apparently too tired/lazy to use a spoon. Love that kid. He makes me laugh.

It’s been a busy weekend and very busy day that I will catch up on soon. But I did want to pass along this awesome Loaded Baked Potato soup recipe! I made it today for Lunch Bunch and I thought it was fantastic. It wasn’t too hard either (but I did have a friend there to talk to which always makes cooking a little easier!). Though, I totally forgot to slice up the scallions for the top. Oops.

What are your favorite fall/winter soups?? Recipes please! We pretty much survive on soup from September to March! šŸ˜‰

I threw together a chili/taco soup type thing, with a large can of crushed tomatoes, a can of corn, a can of black beans, a can of great northern beans, and a bit of quinoa (optional), and 2 packets of taco seasoning (gave it a bit of a kick, but one packet still had a heavy tomato flavor). It was thicker like a chili, but could probably be thinned out some with water.

  2. In Australia we are heading into summer of course Winter hasn't gotten the memo as it has been raining non stop and we are having our wettest September in 43 years! I love the Chicken Nacho soup I make (http://erin-marees-antics.blogspot.com.au/2011/05/chicken-nacho-soup-d.html) its really filling and with a few adjustments I am sure you could do it in the slow cooker. It warms you up and is a bit different compared to other soups as you serve it with sour cream, corn chips and cheese on top of it.
